Whole wheat flour (atta) - 1 cup Rice flour - 1/4 cup Mixed vegetables (carrots, bell peppers, onions, etc.), finely chopped - 1/2 cup Green chillies, finely chopped - 2 Fresh coriander leaves - A handful Asafoetida (hing) - A pinch Cumin seeds - 1/2 tsp Salt - As per taste Oil/Ghee - For cooking
Combine the whole wheat flour (atta) and rice flour in a bowl. Add water while stirring to create a smooth, lump-free batter.
Add a pinch of asafoetida (hing), cumin seeds, and salt. Mix well. Allow the batter to rest for about 10-15 minutes.
Heat oil in a pan and saute the chopped vegetables with green chillies until they are slightly tender.
Now, heat a non-stick or cast-iron dosa pan. Pour a ladleful of the atta dosa batter onto it. Spread it evenly in a circular motion, similar to how you make regular dosas.
Sprinkle the sauteed vegetables and chopped coriander leaves evenly on top of the dosa.
Drizzle a little oil or ghee around the edges of the dosa. Cook it until it turns golden brown and crisp on the bottom.
Flip the dosa using a spatula and cook the other side.
