Simple Mushroom Fried Rice Using Leftover Rice

1-2 tsp chilli oil 3-4 cloves garlic, finely chopped 3/4 cup mushroom, chopped 2 cups leftover rice 1 tsp dark soy sauce 1 tsp light soy sauce Salt and pepper, to taste 2 tbsp spring onions, finely chopped 1/4 cup cucumber, finely chopped 1 tbsp coriander stems, chopped 1-2 red chillies, chopped

Heat chilli oil in a wok

Add in garlic and cook for a few seconds.

Next, add in mushrooms and cook for a minute.

Now add in leftover rice, soy sauce, salt, pepper and mix well.

Finally, add in cucumber, spring onions, red chillies, coriander stems and mix well.

Enjoy it hot with a side of rice crackers.
