Ingredients: - 200g sweet potato starch noodles (dangmyeon) - 2 tablespoons vegetable oil - 1 onion, diced - 2 cloves garlic, minced - 1 cup sliced chicken/beef (optional) - 2 cups mixed vegetables (spinach, carrots, bell peppers, mushrooms) - 2 tablespoons soy sauce - 1 tablespoon Gochujang (Korean chili paste) - 1 tablespoon sugar - Salt and black pepper, to taste - Chopped green onions, for garnish
Cook noodles until tender. Rinse and toss oss with 1/2 tsp sesame oil.
Heat oil in a pan and sauté onion, garlic, and chicken/beef (if using).
Add mixed vegetables (spinach, carrots, bell peppers, mushrooms) and cook until tender.
In a large bowl, whisk together soy sauce, Gochujang, sugar, salt, and pepper.
Add cooked noodles and vegetable mixture to the bowl and toss to combine.
Garnish with green onions and serve hot delicious and healthy Japchae.
