1 tbsp oil1/4 cup cashews1/2 tsp cumin seeds1 dry red chillies, broken1 tbsp ginger, finely chopped1 big onion, finely chopped2-3 fresh red chillies, cut into half1 cup paneer, cut into cubes1 sprig curry leavesJuice from 1 lemonSalt, to taste
Dry roast ingredients for curry leaves mixture and grind to a coarse powder. Keep aside.
Heat oil in a pan. Add cashews. Fry until golden brown and take it out.
In the same pan, add in cumin seeds, dry red chillies, ginger and cook for a few seconds.
Add in onion and cook until lightly browned.
Add the curry leaves mixture and cook for 1-2 minutes. Add water, paneer and mix it well.
Add salt, lemon juice, mix well and cook for 2-3 minutes until the paneer is coated well with the masala. Switch off stove and enjoy!
