South Indian-Style Paneer Fry Recipe

Ingredients for the curry leaves mixture:

3-4 dry red chillies 1/4 cup coriander seeds 2 green cardamom Small cinnamon stick 1 mace 2-3 cloves 4-5 garlic cloves with peel 1 tsp cumin seeds 1/2 tsp pepper Handful curry leaves

Other ingredients

1 tbsp oil 1/4 cup cashews 1/2 tsp cumin seeds 1 dry red chillies, broken 1 tbsp ginger, finely chopped 1 big onion, finely chopped 2-3 fresh red chillies, cut into half 1 cup paneer, cut into cubes 1 sprig curry leaves Juice from 1 lemon Salt, to taste

Dry roast ingredients for curry leaves mixture and grind to a coarse powder. Keep aside.

Heat oil in a pan. Add cashews. Fry until golden brown and take it out.

In the same pan, add in cumin seeds, dry red chillies, ginger and cook for a few seconds.

Add in onion and cook until lightly browned.

Add the curry leaves mixture and cook for 1-2 minutes. Add water, paneer and mix it well.

Add salt, lemon juice, mix well and cook for 2-3 minutes until the paneer is coated well with the masala. Switch off stove and enjoy!
