Gajar ka halwa is a seasonal dessert and everyone's favourite. Here's a look at the vegan recipe of gajar ka halwa made with fresh almond milk.

Ingredients

Carrots - 1 kg (grated) Almond milk - 1 ltr Green cardamom pods - 8 Date paste (According to taste) Cashew nut paste - 1 tbsp (optional) Raisins - 8 Almonds - 1 cup (blanched)

Step 1

In a stainless steel heavy bottom pan add grated carrots.

Step 2

Pour the almond milk into the carrots, add cardamom pods and cook until all liquid has reduced. This will take about 30 - 40 minutes.

Add date paste. Stir occasionally.

Add raisins, and top with almonds.

Serve warm or cold.
