Phirni is a fragrant milk and rice-based Indian dessert served in mitti ke kasore. Here's a step-by-step guide to making delicious Hyderabadi phirni at home.
Ingredients Rice - 2 cups Butter - 150 gm Milk - 1 ltr Cardamom powder - 1 tsp Sugar - 2 tbsp Condensed milk - 1 cup Rose essence - 1 tsp Rose petals (for garnishing) Silver leaf (for garnishing) Clay or terracotta kasoras
Step 1 Soak the rice for 1 hour, drain, dry, and crush with a rolling pin or grinder until the texture resembles semolina.
Step 2 Soak the clay serving dishes in water.
Step 3 Heat the butter in a thick-bottomed pan and lightly roast the rice.
Step 4 Add milk and bring to a boil. When rice is well cooked add the rest of the ingredients stirring constantly.
Step 5 Pour the phirni into the clay dishes and leave to cool.
Step 6 Garnish it with silver leaf and rose petals and serve.
