Ingredients Lotus stem - 350 gm Carom seeds - 1.5 tsp Hing - A pinch Star anise - 1 Black pepper - 1.5 tsp Oil - 100 ml Lemon juice - 1 tsp Haldi - 1 tsp Salt - As per taste
Wash the lotus stem nicely. Strain the water and cut it into small pieces. Now, boil some water in a pan and add the lotus stem slices to it.
Boil them for a few minutes. Drain the water. Put the lotus stem slices on a cloth and allow them to dry for a few hours.
Add carom seeds, black pepper, and star anise in a mixer grinder to form a coarse powder. Heat oil in a pan and add the remaining carom seeds, star anise, and hing. Roast well.
Add the sliced lotus stems and mix well.
Once the pickle cools down, add lemon juice and store it in an air-tight container.
