It is a crispy and lightly spicy pancake-like snack from Telangana. Here's a step-by-step guide of making South Indian-style Sarva Pindi for this Bhai Dooj lunch.
Ingredients Rice flour - 2 cups Chana dal - 2 cups Roasted peanuts, crushed - 1 tbsp Cumin seeds - 1 tsp Chilli powder - 1 tsp Onion, finely chopped - 1 Green chillies, finely chopped - 4 Curry leaves - A sprig Ginger, finely chopped - 1 inch Garlic cloves, finely chopped - 4 White sesame seeds - 1 tsp Salt - As per taste Oil/ ghee - 2 tbsp Oil - For roasting
Step 1 Soak the chana dal for some hours. Drain the water and coarsely crush the dal along with the roasted peanuts and curry leaves.
Step 2 Add rice flour and chana dal-peanut mixture along with the rest of the ingredients except oil to a bowl.
Step 3 Add water gradually and form a soft dough. Add some oil and knead well.
Step 4 Break them into small pieces of dough and flatten them till you get a thick pancake-like shape.
Step 5 Heat oil on a tawa. Place the flattened dough on top and poke small holes. Sprinkle a little oil into the holes.
Step 6 Cover and let the dough cook for a few minutes. Flip and roast the other side until crisp. Serve the sarva pindi hot with tamarind chutney, hari chutney, and spicy garlic chutney.
