Quick And Delicious Coconut Rice Recipe

Take a kadhai and heat 2 tsp oil. Add ½ tsp mustard seeds, ½ tsp cumin seeds, 1 tsp chana dal, and ½ tsp urad dal.

In the same pan, add 12-15 cashew, 1 sprig curry leaf, 2 slit green chilli, 1 tsp chopped ginger, and 1 broken dried red chilli.

Once the curry leaves are crisp, add 2-3 tsp of water to soften the dal.

Add a pinch of asafetida and chopped 1 cup of coconut.

Add cooked rice and add salt to taste.

Mix well and serve hot with chutney.
