Tasty Thai Green Curry Pulao Recipe for Lunch

Ingredients for the Thai curry paste

Coriander stem (chopped) - 1/4 cup    Garlic cloves - 10    Shallots - 10    Chopped ginger - 1 inch    Green chilli - 2    Lemon grass - 2 stalk    Lemon peel - peel of half lemon    Whole black pepper - 1 tsp    Coriander seeds - 1.5 tsp    Cumin seeds - 1 tsp    Basil leaves - 15-20    Water - 1/4 cup    Oil - 1.5 tsp

Ingredients for the pulao

Chopped onion - 1 small    Chopped beans - 1/4 cup    Chopped carrot - 1/4 cup    Cubed tofu - 1/4 cup    Soy sauce - 1 tsp    Diluted coconut milk - 1 cup    Water - 3/4 cup    Soaked basmati rice - 1 cup    Salt to taste    Fresh basil - 6

Firstly, add all the ingredients of the Thai green curry in a blender jar and make a paste. 

Next, heat oil in a pan and sauté the prepared paste until raw smell disappears. 

Add in the chopped veggies and tofu along with soy sauce. Sauté for 5-7 minutes.

Now add coconut milk, water, soaked rice, and salt.

Cover and cook until the rice is cooked.

Serve the Thai green curry pulao with a fresh salad.
