Tri-Colour Fruit Cake Recipe For Independence Day

Ingredients: For the Cake Base: • 1 ½ cups all-purpose flour • 1 cup sugar • 1/2 cup unsalted butter, softened • 3 large eggs • 1/2 cup milk • 1 tsp baking powder • 1/4 tsp baking soda • 1 tsp vanilla extract • 1/4 tsp salt For the Flavouring: • 1 orange • 1/4 tsp orange food colouring • 1/4 cup fresh mint leaves, finely chopped • 1/4 tsp green food colouring • 1 tsp vanilla extract

Preheat your oven to 350°F (175°C). Grease and flour three 6-inch round cake pans.

In a large mixing bowl, cream together the butter, eggs, sugar. Add flour, baking powder, baking soda, and salt until fluffy.

Divide the batter evenly into three bowls. To the first bowl, add the orange juice, and orange food colouring. Mix well.

To the second bowl, add the chopped mint leaves and green food colouring. Mix well.

To the third bowl, add vanilla extract. Pour each batter into the pans and bake in the preheated oven for 20-25 mins.

Once the cakes are completely cool, place the mint-flavoured cake on a serving plate. Place the vanilla layer over it and the orange layer at the top.

You can frost the entire cake with a simple buttercream or cream cheese. Decorate with mint leaves, orange slices, or fruit of your choice. Serve and enjoy.
