Vegan Pumpkin Pancake Recipe

Pumpkin pancake is great for vegans as it is made with chickpea flour and packed with pumpkin puree. Try this vegan pumpkin pancake recipe at home.

Ingredients

Pumpkin puree - 1 cup Almond milk - 240 ml Vanilla extract - 2 tsp Chickpea flour - 240 gm Cinnamon powder - 1 tsp Nutmeg powder - 1 tsp Clove powder - 1/2 tsp Baking powder - 1/2 tsp

Add pumpkin puree, almond milk, and vanilla extract to a bowl and mix it well.

In another bowl, mix chickpea flour, clove powder, cinnamon powder, nutmeg powder, baking powder, and salt.

Add dry ingredients to wet ingredients in a large mixing bowl and mix until well combined. If the batter seems a little thick, adjust the same with almond milk.

Set a nonstick pan over medium heat and grease with oil. Pour a little batter onto a heated pan and cook until bubbles start to form on the surface and the edges are golden brown.

Flip and cook for an additional 1-2 minutes.
