Vegan Rabri Recipe

Soak 1/2 cup cashews in hot water for 20 minutes

Blend cashews with 1 cup almond milk to make a smooth paste.

In a pan, boil 2 cups almond milk.

Add the cashew paste and stir continuously.

Simmer until the mixture thickens.

Add 1/4 cup coconut sugar and a pinch of saffron.

Cook until the rabri reaches desired consistency.

Garnish with chopped pistachios and almonds. Serve chilled.
