Vegan Tikka Masala Curry recipe

Ingredients:
1 block tofu (cubed), 2 tbsp oil, 1 onion (chopped), 2 garlic cloves (minced), 1 tbsp ginger (minced), 1 can diced tomatoes,
Ingredients:
1 cup coconut milk, 2 tbsp tikka masala spice blend, 1 tsp cumin, 1/2 tsp turmeric, 1/2 tsp paprika, salt to taste,
Cook:
Tofu in oil until golden brown; set aside.
Sauté:
Onion in the same pan until translucent.
Add:
Garlic and ginger; cook for 1 minute.
Mix:
In tomatoes, tikka masala, cumin, turmeric, paprika; simmer for 5 minutes
Pour:
In coconut milk; stir well and simmer for 5 minutes.
Add:
Cooked tofu; mix and cook for another 5 minutes.
Season:
With salt to taste.
Garnish:
With cilantro; serve with rice or naan.
