Yummy Hariyali Dum Aloo Recipe

2 cups boiled and peeled baby potatoes 1/2 cup blanched spinach 1/2 cup coriander 2 tbsp roughly chopped garlic 1 tsp roughly chopped ginger 1 tbsp roughly chopped green chillies 1/4 cup curd 2 tbsp oil 1 small cinnamon stick 1 bay leaf 2 cloves 1/2 cup finely chopped onions 1/4 tsp turmeric powder 1/2 tsp chilli powder 1 tsp cumin seeds 1 tbsp fresh cream 1 tbsp dried fenugreek leaves

In a mixer add coriander, spinach, garlic, ginger, green chillies, curd and blend it into a smooth paste.

In a deep pan, heat oil and fry the baby potatoes till golden brown.

Add turmeric powder, chilli powder and mix well. Remove and keep aside.

In the same pan, heat 1 tbsp oil, add bayleaf, cinnamon, cloves, cumin seeds, onions and sauté on medium flame for 2 to 3 minutes.

Add the green masala paste, fried baby potatoes, fresh cream, kasuri methi, salt to taste and ½ cup of hot water.

Mix well and cook on medium flame for 3 to 4 minutes, while stirring occasionally.

Serve hariyali dum aloo hot with rice or roti of your choice.
